Wholesome Gluten-Free Herb Stuffing Thanksgiving Recipe

A foolproof gluten-free stuffing with perfectly toasted bread, fresh herbs, and a crisp top that holds its shape. This crowd-pleasing side dish is so delicious, no one will guess it’s gluten-free.

  • 1 large loaf gluten-free bread (about 10 cups cubed)
  • 6 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons fresh sage leaves, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cups low-sodium chicken or vegetable broth
  • 2 large eggs
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Cut gluten-free bread into 1/2-inch cubes (about 10 cups). Spread in a single layer on a large baking sheet. Toast for 12-15 minutes, stirring halfway, until dry, golden, and slightly crisp. Set aside to cool.
  2. While bread toasts, melt butter in a large skillet over medium heat. Add diced onion and celery; cook 6-8 minutes until onion is translucent and celery softened. Add minced garlic, chopped sage, thyme, and rosemary; cook 1 minute until fragrant.
  3. In a small bowl, whisk together broth and eggs until combined. Season with salt and pepper. Set aside.
  4. Transfer toasted bread cubes to a large mixing bowl. Pour sautéed vegetable-herb mixture over top and toss gently. Gradually pour broth-egg mixture over bread, tossing until liquid is absorbed. Fold in fresh parsley.
  5. Transfer stuffing to a greased 9×13-inch baking dish. Cover with foil and bake at 375°F for 25 minutes. Remove foil and bake 15-20 minutes more until top is golden brown and slightly crisp.
  6. Let stuffing rest 5-10 minutes before serving. Garnish with extra fresh parsley if desired.

Notes

Toast bread until bone-dry to prevent sogginess. Use fresh herbs for best flavor. Let stuffing rest before serving to help it set. Can be assembled up to 24 hours ahead and refrigerated unbaked; add 5-10 minutes to baking time if starting from cold.
