  1. Preheat your oven to 375°F (190°C). Cut your sugar pumpkin in half from stem to stem. Scoop out the seeds and stringy bits. Place the pumpkin halves cut-side down on a baking sheet lined with parchment paper. Roast for 45 to 55 minutes, until the flesh is tender and easily pierced with a fork. Let it cool completely, then scoop out the flesh. Puree it in a food processor until smooth, then press it through a fine-mesh sieve to remove any fibrous bits.
