These Easy Turkey & Cheese Pinwheel Lunchbox Roll-Ups are a quick, kid-approved solution to sandwich boredom. Made with simple ingredients like tortillas, cream cheese, turkey, and cheese, they come together in 10 minutes and hold up perfectly in lunchboxes.

Ingredients

Scale
  • Large flour tortillas (10-inch)
  • 8 oz cream cheese, softened
  • 810 slices deli turkey breast
  • 46 slices provolone or Swiss cheese
  • Salt and pepper to taste
  • Optional add-ins: thinly sliced cucumber, spinach leaves, mustard or honey

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15-20 minutes or microwaving for 10-15 seconds on low power.
  2. Lay out a tortilla on a clean cutting board. Let it come to room temperature if refrigerated.
  3. Spread the cream cheese evenly over the entire surface of the tortilla, leaving a half-inch border around the edges.
  4. Layer the turkey slices over the cream cheese, overlapping slightly for full coverage.
  5. Add the cheese slices on top of the turkey, overlapping slightly.
  6. Season lightly with salt and pepper if desired.
  7. Roll the tortilla up tightly, starting at one edge and rolling toward the other, keeping even pressure.
  8. Wrap the roll tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper.
  9. Refrigerate for at least 15-20 minutes, or up to overnight, to firm up the cream cheese.
  10. Slice into 1-inch thick pinwheels using a sharp serrated knife. Cut off the uneven ends first.
  11. Arrange in lunchboxes or on a serving platter. Use toothpicks to keep them from unrolling if packing for later.

Notes

Cream cheese must be at room temperature to avoid tearing tortillas. Chilling the roll before slicing is crucial for neat pinwheels. Use a serrated knife for clean cuts. These taste better after a few hours in the fridge. Store unsliced roll wrapped in plastic wrap for up to 3 days. Freeze whole roll for up to 1 month.
