  • 1/4 cup unsalted butter (57g), cold and cut into small cubes
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: 2 tablespoons chopped pecans or walnuts (15g)

Instructions

  1. Preheat your oven to 350°F (175°C) and place a baking sheet on the middle rack.
  2. Peel and chop your apples into roughly 1/2-inch cubes. Toss them in a bowl with the lemon juice right away.
  3. To the apples, add the brown sugar, granulated sugar, flour, cinnamon, nutmeg, and salt. Stir everything together until the apples are evenly coated. Set aside.
  4. In a separate bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter, two forks, or your fingertips to cut the butter into the dry ingredients until the mixture is crumbly with pea-sized butter pieces. If adding nuts, stir them in now.
  5. Divide the apple mixture evenly between two 8-ounce ramekins. Sprinkle the topping over each one, pressing down gently.
  6. Place the ramekins on the preheated baking sheet and bake for 30-35 minutes, until the topping is golden brown and the apple juices are bubbling around the edges.
