  • 4 (8-inch) flour tortillas
  • 1 cup (120g) shredded cheddar cheese
  • ½ cup (60g) shredded Monterey Jack cheese
  • 1 tablespoon unsalted butter or avocado oil
  • ½ cup (120ml) salsa (for dipping)

Instructions

  1. Grate cheddar and Monterey Jack cheese if using blocks. Let cheese sit at room temperature while preparing the pan.
  2. Place a non-stick skillet over medium heat. Add ½ tablespoon butter and let it melt completely, swirling to coat the bottom.
  3. Lay one tortilla flat on a cutting board. Sprinkle about ¾ cup of the shredded cheese mixture evenly over half of the tortilla, leaving a ½-inch border. Fold the empty half over the cheese to create a half-moon shape. Press down gently to seal.
  4. Carefully place the quesadilla in the hot skillet. Cook without moving for 3-4 minutes, until the bottom is golden brown with dark spots.
  5. Flip the quesadilla with a spatula. Cook for another 2-3 minutes until the second side is golden brown and the cheese is fully melted. If the pan looks dry, add the remaining ½ tablespoon butter before flipping.
  6. Transfer the cooked quesadilla to a cutting board and let it rest for 1 minute. Use a pizza cutter or sharp knife to slice into 4 or 6 wedges.
  7. Let the wedges cool completely before packing. Place in a lunchbox container with salsa in a separate compartment or small container.

For best results, use freshly shredded cheese and medium heat. Let wedges cool completely before packing to avoid sogginess. Store salsa separately. Can be made ahead and reheated in a dry skillet.
