  • Salt and black pepper to taste
  • 2 tablespoons capers, drained (optional)
  • 1/4 cup chicken or vegetable broth (optional)
  • Fresh dill sprigs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking dish with parchment paper or foil for easy cleanup.
  2. Slice one lemon into thin rounds, about 1/4 inch thick. Lay them in a single layer on the bottom of the baking dish.
  3. Pat the salmon fillets dry with paper towels. Place them skin-side down on top of the lemon slices. Season generously with salt and black pepper.
  4. In a small bowl, combine the softened butter, chopped dill, and minced garlic. Mix until well combined.
  5. Divide the butter mixture evenly among the fillets, spreading it on top. If using capers, sprinkle them over the top now.
  6. If using broth, pour it around the salmon, not directly on top.
  7. Bake for 12-15 minutes, until the salmon flakes easily with a fork and the internal temperature reaches 145°F (63°C).
  8. Let the salmon rest in the dish for 2-3 minutes. Garnish with fresh dill sprigs and serve immediately.

Don’t overcook the salmon; it continues to cook after removal from the oven. Use room-temperature butter for even spreading. Pat the salmon dry to ensure a buttery texture. For a dairy-free version, substitute butter with olive oil or vegan butter. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently in a 300°F oven or skillet.
