  • ½ cup granulated sugar (100g)
  • 3 tablespoons unsalted butter (42g), cut into pieces
  • ¼ cup heavy cream (60ml)
  • ½ teaspoon flaky sea salt (plus more for sprinkling)
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the salted caramel sauce: In a small saucepan over medium heat, cook granulated sugar, stirring occasionally with a whisk, until it melts and turns a deep amber color (5-7 minutes). Remove from heat and immediately whisk in butter pieces until melted and smooth.
  3. Slowly pour in heavy cream while whisking constantly until smooth and glossy. Stir in flaky sea salt and vanilla extract. Set aside to cool slightly.
  4. Prepare the apple filling: In a large mixing bowl, combine sliced apples, maple syrup, lemon juice, vanilla extract, cornstarch, cinnamon, nutmeg, and a pinch of salt. Toss until evenly coated. Let sit for 5 minutes.
  5. Make the oat crumble topping: In a medium mixing bowl, whisk together rolled oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter or fingertips, work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  6. Assemble the crisp: Pour apple mixture into a 9×13 inch baking dish and spread evenly. Drizzle about half of the salted caramel sauce over the apples. Sprinkle oat crumble topping evenly over the apples, without pressing down.
  7. Bake for 40 to 45 minutes, until topping is golden brown and filling is bubbling around the edges. If topping browns too quickly after 30 minutes, tent loosely with foil.
  8. Let crisp rest for 10 minutes. Drizzle remaining caramel sauce over the top and sprinkle with additional flaky sea salt.
