  • 3 cloves garlic, minced
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can pinto beans, drained and rinsed
  • 1 (15-ounce) can fire-roasted diced tomatoes, undrained
  • 1 (4-ounce) can diced green chiles, undrained
  • 1 cup salsa verde
  • 1/2 cup red enchilada sauce (mild or medium)
  • 3 cups low-sodium chicken broth (or vegetable broth for vegetarian version)
  • 1 cup frozen corn kernels
  • 1 packet (1 ounce) low-sodium taco seasoning
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Shredded sharp cheddar cheese or Monterey Jack (for topping)
  • Crumbled cotija cheese or queso fresco (for topping)
  • Diced avocado (toss with lime juice to prevent browning) (for topping)
  • Fresh pico de gallo or diced Roma tomatoes (for topping)
  • Sliced jalapeños (fresh or pickled) (for topping)
  • Crunchy tortilla strips or crushed tortilla chips (for topping)
  • Sour cream or plain Greek yogurt (for topping)
  • Fresh cilantro, roughly chopped (for topping)

Instructions

  1. Brown the turkey: Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until no longer pink—about 6 to 8 minutes. Season with a pinch of salt and pepper as it cooks.
  2. Sauté the aromatics: Add the diced onion to the skillet with the cooked turkey. Cook for 3 to 4 minutes, stirring occasionally, until the onion becomes translucent and soft. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Transfer to slow cooker: Carefully scoop the turkey and onion mixture into your slow cooker.
  4. Add the canned goods: Pour in the drained black beans, drained pinto beans, fire-roasted tomatoes (with their juices), diced green chiles, salsa verde, and enchilada sauce. Give everything a good stir to combine.
  5. Add broth and seasonings: Pour in the chicken broth, then add the frozen corn, taco seasoning, ground cumin, and smoked paprika. Stir well.
  6. Slow cook: Cover the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
  7. Taste and adjust: About 30 minutes before serving, give the soup a taste. Add salt and pepper as needed. If it’s too thick, stir in a little extra broth or water. If you want more heat, add a dash of hot sauce or a pinch of cayenne.
  8. Prepare the topping bar: While the soup finishes, set up your bowls of toppings. Arrange them on a counter or table so everyone can easily reach.
  9. Serve: Ladle the hot soup into bowls and let everyone customize their own.

Notes

For a vegetarian version, swap the ground turkey for an extra can of black beans or crumbled tempeh. For a spicier version, use hot enchilada sauce and add a minced chipotle pepper in adobo. The soup tastes even better the next day. Store leftover soup base separately from toppings. Freezes well for up to 3 months.
