  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts, toasted if desired

Instructions

  1. Brown the butter: Place 6 tablespoons of unsalted butter in a medium saucepan over medium heat. Stir occasionally as it melts, then starts to foam and turn golden brown with a nutty aroma. Remove from heat and let it cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  3. In a large mixing bowl, mash 3 very ripe bananas with a fork until mostly smooth but with some texture remaining.
  4. Add 3/4 cup brown sugar, 1/4 cup granulated sugar, and 2 large eggs to the bananas. Mix until well combined.
  5. Slowly pour the cooled brown butter into the banana mixture along with 1 teaspoon vanilla extract. Stir gently to combine.
  6. In a separate small bowl, whisk together 1 3/4 cups sifted all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  7. Gradually add the dry ingredients to the wet, folding gently until just combined. Avoid overmixing.
  8. Stir in 1/2 cup chopped walnuts, toasted if desired.
  9. Pour the batter into the prepared loaf pan, smoothing the top lightly.
  10. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean (a few moist crumbs are fine).
  11. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack before slicing.

Notes

Use a light-colored pan for browning butter to better monitor color. Avoid overmixing the batter to keep the bread tender. Toast walnuts for extra flavor. Tent with foil if bread browns too quickly. Very ripe bananas are key for sweetness and moisture. For gluten-free, substitute almond flour but expect a denser crumb. For dairy-free, use coconut oil browned gently.
