  • 4 ounces Genoa salami, thinly sliced
  • 3 ounces prosciutto, thinly sliced
  • 2 ounces spicy capicola or soppressata
  • 3 ounces sharp cheddar, cubed
  • 3 ounces creamy brie, sliced into wedges
  • 2 ounces blue cheese crumbles
  • 1/2 cup fig jam or red pepper jelly
  • 1/4 cup spicy honey
  • 1/4 cup whole grain mustard
  • 1 cup mixed crackers (water crackers and rosemary crackers)
  • 1/2 cup salted pretzel sticks
  • 1/2 cup Marcona almonds or regular roasted almonds
  • 1/2 cup cornichons or dill pickle spears
  • 1/4 cup kalamata olives, pitted
  • 1/4 cup dried apricots
  • A handful of fresh grapes (red or green)
  • A few sprigs of fresh rosemary or thyme for garnish (optional)

Instructions

  1. Start with the bowls. Place your small bowls of fig jam, spicy honey, and whole grain mustard on the board first in a triangle pattern—one at the top left, one at the bottom center, and one at the top right.
  2. Add the cheeses. Place the cubed cheddar in a small cluster near one of the bowls. Fan out the brie wedges in a line next to it. Scatter the blue cheese crumbles in a little pile near the edge of the board.
  3. Layer the meats. Fold the salami slices into quarters and arrange them in a small pile. Drape the prosciutto in loose ribbons. Roll the capicola into little cylinders. Place these in different sections of the board, away from the cheeses.
  4. Fill in with crackers and pretzels. Arrange the crackers in a fan pattern around one of the bowls. Stack the pretzel sticks in a small bundle.
  5. Add the fresh and pickled elements. Scatter the cornichons, olives, and dried apricots in the empty spaces. Tuck the grapes in between the cheese and meat clusters. Fill in the gaps so no bare wood is showing.
  6. Garnish and finish. Sprinkle the almonds over the board for extra crunch. Lay a few sprigs of rosemary or thyme on top of the cheese for color. Drizzle a little extra spicy honey over the brie if desired.
  7. Step back and adjust. Look at the board from above. If one section is too empty, move a few crackers or olives over until it feels balanced.

Notes

Take cheese out of the fridge 30 minutes before assembling for best flavor. Don’t overcrowd the board—leave some breathing room. Pre-cut all cheese for easier eating. For a gluten-free version, use rice crackers or cucumber slices instead of crackers. The board can be assembled up to 1 hour ahead, but keep crackers and pretzels separate until serving to prevent sogginess.
