  • 1/2 cup Mixed Olives (e.g., Castelvetrano and Kalamata)
  • 1/4 cup Honey (for drizzling)
  • 1/4 cup Fig Jam or Red Pepper Jelly
  • 1/4 cup Roasted Almonds (Marcona almonds preferred)
  • 1/4 cup Dried Apricots or Figs
  • 1 small bunch Red Grapes (washed, separated into small clusters)
  • 1 small Baguette (sliced into thin rounds, lightly toasted)
  • 1/2 cup Assorted Crackers (plain water crackers and seed/herb crackers)

Instructions

  1. Prep Your Ingredients (5 minutes): Take cheeses out of fridge to warm up. Slice baguette into thin rounds and toast at 350°F (175°C) for 5-7 minutes until just golden. Rinse and dry grapes. Place olives, fig jam, and honey into small bowls.
  2. Place the Bowls (1 minute): Arrange three small bowls on the board in a triangle shape—one in top left, one in bottom middle, one in top right.
  3. Add the Cheeses (3 minutes): Place cheddar, goat cheese, and Manchego around the bowls. Cut cheddar and Manchego into thick slices or cubes. Leave goat cheese log whole or slice into thick rounds. Spread cheeses out so each section has a cheese nearby.
  4. Fold the Meats (4 minutes): Drape prosciutto in loose, wavy ribbons. For salami and soppressata, make salami roses: overlap 4-5 slices slightly, fold stack in half, roll tightly from one end, place seam-side down, and gently pull back outer layers to form a ‘rose.’ Place roses in different spots on the board.
  5. Fill the Gaps (3 minutes): Fill empty spaces with grape clusters, almonds, dried apricots, toasted baguette slices, and crackers. Aim for a full, abundant look with no bare wood showing.
  6. Final Touches (2 minutes): Drizzle honey over goat cheese. Put a small spoon in fig jam. Step back and adjust for color and crunch. Total time: about 18 minutes.

Notes

Let cheese sit at room temperature for at least 20 minutes before serving for best flavor and texture. For salami roses, use slightly thicker slices so they hold their shape. If roses fall apart, simply lay slices in a neat pile. Prep all components earlier in the day and assemble just before serving. For a vegetarian version, skip meats and add more cheese, marinated artichoke hearts, and roasted red peppers.
