Ingredients

  • All-purpose flour, 2 cups (240g)
  • Granulated sugar, 1 ½ cups (300g)
  • Unsalted butter, ½ cup (113g), softened
  • Vegetable oil, ¼ cup (60ml)
  • Large eggs, 2, room temperature
  • Whole milk, 1 cup (240ml)
  • Vanilla extract, 2 teaspoons
  • Baking powder, 2 teaspoons
  • Salt, ½ teaspoon
  • Unsalted butter, 1 cup (226g), softened (for frosting)
  • Powdered sugar, 4 cups (480g), sifted (for frosting)
  • Heavy cream, 3-4 tablespoons (45-60ml) (for frosting)
  • Vanilla extract, 1 teaspoon (for frosting)
  • Salt, a pinch (for frosting)
  • Rainbow sprinkles, ½ cup (about 80g), plus more for topping (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter or non-stick spray, then line the bottoms with parchment paper circles.
  2. In your large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the vegetable oil and mix until combined, about 30 seconds.
  4. Add the eggs one at a time, mixing well after each.
  5. Pour in the vanilla extract and mix briefly.
  6. In a separate small bowl, whisk together the flour, baking powder, and salt.
  7. Add half the dry ingredients to the wet mixture and mix until just combined.
  8. Pour in the milk and mix until smooth.
  9. Add the remaining dry ingredients and mix until just combined.
  10. Divide the batter evenly between the two prepared pans. Smooth the tops with a spatula.
  11. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then turn out onto a cooling rack to cool completely.
  12. While the cakes cool, make the frosting: In a clean bowl, beat the softened butter until smooth and creamy, about 2 minutes. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed. Add the heavy cream, vanilla extract, and salt, then beat on medium-high for 3-4 minutes until light and fluffy. Fold in the sprinkles gently.
  13. Once the cakes are completely cool, assemble: Place one layer on serving plate, spread a generous layer of frosting on top, then place the second layer on top. Frost the top and sides with remaining frosting. Top with extra sprinkles while frosting is still soft.

Room temperature ingredients are key for best texture. Don’t overmix the batter once flour is added. Let cakes cool completely before frosting.
