The Best Garlic Butter Crockpot Chicken Thighs

Tender, fall-apart chicken thighs cooked low and slow in a rich garlic butter herb sauce. This set-it-and-forget-it recipe is perfect for busy weeknights and requires just five minutes of prep.

Ingredients

  • 4 bone-in, skin-on chicken thighs (about 1.5 to 2 pounds total)
  • Salt and black pepper, to taste
  • 4 tablespoons unsalted butter, cut into 4 pieces
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed between your fingers
  • 1 teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley or thyme sprigs for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
  2. In a small bowl, combine the softened butter, minced garlic, dried thyme, crushed rosemary, dried oregano, dried parsley, and red pepper flakes if using. Mash together with a fork until well combined.
  3. Place the chicken thighs in the bottom of your slow cooker, skin side up if possible, in a single layer.
  4. Spoon the garlic herb butter over each chicken thigh, dividing it evenly.
  5. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  6. About 30 minutes before serving, carefully transfer the chicken thighs to a baking sheet lined with foil. Place under the broiler for 3 to 5 minutes until the skin is crispy, watching closely.
  7. While the chicken is under the broiler, pour the remaining juices from the slow cooker into a small saucepan. Simmer on the stovetop for a few minutes to reduce slightly.
  8. Return the broiled chicken to the slow cooker or place on a serving platter. Spoon the reduced sauce over the top. Garnish with fresh parsley or thyme sprigs and serve immediately.

Notes

Don’t add extra liquid to the slow cooker; the chicken releases its own juices. For crispy skin, don’t skip the broiler step. If using boneless skinless thighs, reduce cooking time to 4-5 hours on low. Leftovers keep for up to 4 days in the refrigerator and freeze well for up to 3 months.
