  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 3 large carrots, peeled and cut into chunks
  • 3 celery stalks, cut into chunks
  • 2 cups apple cider
  • 1 cup beef broth, low-sodium
  • 2 tablespoons tomato paste
  • 2 sprigs fresh rosemary (or 1 teaspoon dried)
  • 3 sprigs fresh thyme (or 1 teaspoon dried)
  • 2 bay leaves
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper to taste
  • 2 tablespoons all-purpose flour (optional, for thickening)

Instructions

  1. Preheat your oven to 325°F (163°C). Take the chuck roast out of the fridge and let it sit at room temperature for about 20 minutes. Pat it dry very thoroughly with paper towels.
  2. Season the roast generously with salt and black pepper on all sides (about 1 teaspoon salt and ½ teaspoon pepper per side).
  3. Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat until shimmering. Sear the roast without moving it for 4-5 minutes per side, including the ends, until deep brown. This should take about 15 minutes total.
  4. Remove the roast to a plate and set aside. Do not clean the pot.
  5. Reduce heat to medium and add the diced onion. Cook for 5-6 minutes, stirring occasionally, until soft and translucent, scraping up browned bits.
  6. Add the minced garlic and cook for 30 seconds until fragrant. Stir in the tomato paste and cook for another minute, stirring constantly.
  7. Pour in the apple cider and beef broth, using a wooden spoon to scrape up any remaining browned bits. Bring to a simmer.
  8. Return the roast to the pot along with any accumulated juices. Add carrots, celery, rosemary, thyme, and bay leaves. The liquid should come about halfway up the sides of the roast; add a little water if needed.
  9. Bring everything to a gentle simmer, then cover the pot with the lid and transfer to the preheated oven.
  10. Braise for 2.5 to 3 hours, or until the meat is fork-tender. Check at the 2-hour mark and add a splash more broth or water if the liquid is getting too low.
  11. Remove the pot from the oven and carefully transfer the roast to a cutting board. Let it rest for 10-15 minutes before shredding or slicing.
  12. While the meat rests, make the sauce: remove herb sprigs and bay leaves. For a thicker sauce, whisk 2 tablespoons flour with ¼ cup cold water until smooth, then stir into the simmering liquid. Cook for 3-4 minutes until thickened. Stir in the apple cider vinegar and adjust seasoning with salt and pepper.
  13. Return the shredded meat to the pot with the vegetables and sauce. Stir gently to coat. Serve immediately or refrigerate for even better flavor the next day.

Notes

Don’t rush the sear; pat the meat dry for best browning. Low and slow cooking is key for tenderness. Let the roast rest before slicing. The apple cider vinegar at the end brightens the dish. Leftovers taste even better the next day.
