Slow Cooker BBQ Pulled Pork Sliders Recipe Easy for a Crowd

  • 45 pounds pork shoulder (Boston Butt)
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 2 tablespoons brown sugar (light or dark)
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup apple cider vinegar (120 ml)
  • 1 cup BBQ sauce (240 ml), store-bought or homemade
  • 1216 soft slider buns
  • Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions

  1. Trim excess fat from the pork shoulder, leaving some for flavor and moisture. Mix smoked paprika, brown sugar, chili powder, salt, and black pepper in a small bowl. Pat the pork dry and rub the spice mix all over the meat, pressing gently to adhere.
  2. Place sliced onion at the bottom of the slow cooker insert. Add minced garlic on top of the onions.
  3. Place the seasoned pork shoulder on top of the onions and garlic. Pour apple cider vinegar around the pork (not directly on top) to avoid washing off the rub. Spoon ½ cup of BBQ sauce over the pork, spreading lightly.
  4. Cover the slow cooker and cook on low heat for 6-8 hours until the pork is fork-tender and shreds easily. Avoid lifting the lid during cooking.
  5. Remove the pork from the slow cooker onto a plate or cutting board. Shred the meat using two forks or tongs. Return shredded pork to the slow cooker juices and stir to coat evenly. Add remaining ½ cup BBQ sauce and mix well.
  6. Optional: Wrap slider buns in foil and warm in a 350°F (175°C) oven for 5 minutes while shredding the pork.
  7. Assemble sliders by spooning a generous amount of pulled pork onto each bun bottom. Add optional coleslaw or pickles, then top with the bun lid. Serve immediately.

Notes

Do not lift the slow cooker lid during cooking to maintain temperature. Remove excess fat from cooking juices before shredding to avoid greasy sliders. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, skip creamy coleslaw toppings. If pork isn’t shredding easily, cook longer. Thin BBQ sauce with apple cider vinegar or water if too thick.
