A simple, one-pan dinner featuring juicy bratwurst and caramelized cabbage, perfect for Oktoberfest or any cozy weeknight. This honest, hearty meal comes together with minimal effort and maximum flavor.

  • 46 bratwurst links (about 1.5 lbs)
  • 1 medium head green cabbage (about 2 lbs), cut into 1-inch wedges
  • 1 large yellow onion, cut into 1-inch chunks
  • 1 medium apple (Granny Smith or Honeycrisp), cored and cut into chunks
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon caraway seeds
  • 2 tablespoons whole grain mustard
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut cabbage in half through the core, then cut each half into 1-inch thick wedges, keeping the core intact.
  3. Peel and cut onion into 1-inch chunks. Core apple (no need to peel) and cut into similar-sized chunks.
  4. In a large mixing bowl, whisk together olive oil, apple cider vinegar, whole grain mustard, caraway seeds, salt, and pepper.
  5. Add cabbage wedges, onion chunks, and apple pieces to the bowl. Toss until everything is well coated.
  6. Spread the cabbage mixture in an even layer on a large sheet pan. Nestle bratwurst links into the vegetables.
  7. Roast for 20 minutes.
  8. Flip bratwurst and stir vegetables. If cabbage looks dry, drizzle with a little more olive oil. Rotate the pan front to back.
  9. Roast for another 15-20 minutes, until cabbage is deeply caramelized and bratwurst are golden brown and have split slightly. Internal temperature of bratwurst should reach at least 160°F (71°C).
  10. Let rest on the pan for 5 minutes before serving. Sprinkle with fresh parsley if desired. Serve with extra whole grain mustard.

Notes

For extra crispy bratwurst, switch oven to broil for the last 2-3 minutes. Watch carefully to avoid burning. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for about 10 minutes or in a skillet with a splash of water or broth.
