Savory Firecracker Jalapeño Deviled Eggs with Crispy Bacon

These deviled eggs pack a punch with roasted jalapeño heat, creamy yolk filling, and crispy bacon for a smoky, spicy, and creamy appetizer perfect for parties.

  • 12 large eggs, hard-boiled and peeled
  • 23 medium jalapeños, roasted and finely chopped
  • 45 slices thick-cut bacon, cooked until crispy and crumbled
  • 3 tablespoons mayonnaise
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh chives or green onions, finely chopped, for garnish

Instructions

  1. Place 12 large eggs in a medium pot and cover with cold water by about an inch. Bring to a gentle boil over medium-high heat, then cover and remove from heat. Let sit for 12 minutes. Drain and transfer eggs to an ice bath to cool for 5-10 minutes.
  2. Preheat oven to 425°F (220°C). Place 2-3 jalapeños on a baking sheet and roast for 12-15 minutes, turning halfway, until skins are blistered and blackened in spots. Remove, let cool, then finely chop, discarding seeds if less heat is desired.
  3. In a skillet over medium heat, cook 4-5 slices of thick-cut bacon until crispy, about 6-8 minutes. Transfer to paper towels to drain, then crumble once cool.
  4. Peel cooled eggs and slice in half lengthwise. Remove yolks and place in a mixing bowl. Mash yolks with mayonnaise, cream cheese, Dijon mustard, apple cider vinegar, and smoked paprika. Stir in chopped roasted jalapeños and half the crumbled bacon. Season with salt and pepper to taste.
  5. Using a spoon or piping bag, fill each egg white half generously with the yolk mixture.
  6. Sprinkle remaining crumbled bacon and chopped fresh chives or green onions on top. Optionally dust with smoked paprika. Serve chilled or at room temperature.

Notes

Remove jalapeño seeds to reduce heat. For dairy-free, substitute cream cheese with mashed avocado or plant-based spread. Greek yogurt can replace mayo but changes texture. Roast jalapeños ahead for deeper flavor. Avoid microwaving deviled eggs to prevent rubbery texture.
