A quick and easy savory baked pork chop recipe featuring a tangy-sweet balsamic reduction that creates a juicy, flavorful meal perfect for weeknight dinners.

Ingredients

Scale
  • 2 bone-in or boneless pork chops, about 1-inch thick
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • 1 teaspoon dried thyme or rosemary (or fresh herbs if available)
  • 1/2 cup (120 ml) balsamic vinegar
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon butter (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the pork chops generously on both sides with salt, pepper, garlic powder, and thyme or rosemary.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. When shimmering, add pork chops and sear for 2-3 minutes on each side until golden brown.
  4. Transfer the skillet or baking dish to the oven and bake for 10-12 minutes, or until the internal temperature reaches 145°F (63°C).
  5. While the chops bake, prepare the balsamic reduction: combine balsamic vinegar and brown sugar or honey in a small saucepan. Bring to a gentle boil, then reduce heat and simmer for 8-10 minutes until thickened and syrupy, stirring occasionally.
  6. Remove the reduction from heat and stir in butter for extra richness, if desired.
  7. Let the pork chops rest for 5 minutes after baking.
  8. Drizzle the balsamic reduction generously over the pork chops before serving.

Notes

Use a meat thermometer to ensure pork is cooked to 145°F for safety and juiciness. Let pork rest after baking to redistribute juices. Stir balsamic reduction often to prevent burning. The reduction can be made ahead and reheated gently. For dairy-free, omit butter or use plant-based alternative. The glaze also works well on chicken breasts or pork tenderloin.
