Refreshing Frozen Watermelon Tajin Popsicles with Lime

A quick and easy homemade summer treat combining sweet watermelon, tangy lime, and a subtle spicy kick of Tajín seasoning for a refreshing and flavorful popsicle.

Ingredients

  • 4 cups (about 600 grams) seedless watermelon chunks
  • 2 tablespoons fresh lime juice (from about 1 large lime)
  • 1 to teaspoons Tajín seasoning
  • 1 tablespoon honey or agave syrup (optional)
  • 2 tablespoons water

Instructions

  1. Cut watermelon into chunks, removing any seeds if necessary, to get about 4 cups (600 grams) of fruit.
  2. Place watermelon chunks, lime juice, Tajín seasoning, and water in a blender and blend until smooth, about 1-2 minutes.
  3. Taste the mixture and add honey or agave syrup if additional sweetness is desired; blend briefly again.
  4. Pour the mixture into popsicle molds, leaving space at the top for expansion, and insert popsicle sticks.
  5. Freeze for at least 4 hours or until completely solid; overnight is ideal.
  6. To unmold, run molds briefly under warm water for 10-15 seconds and gently pull out the popsicles.

Notes

Use ripe, sweet watermelon for best flavor. Adjust Tajín seasoning to taste, especially for children. Running molds under warm water helps unmold popsicles easily. Smaller molds or ice cube trays can reduce freezing time. The popsicles keep well up to 2 weeks in the freezer.
