  • 8 bone-in, skin-on chicken thighs (about 34 lbs / 1.41.8 kg)
  • 2 tablespoons vegetable or canola oil
  • ¼ cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon chili flakes (optional)
  • 1 large head of broccoli, cut into bite-sized florets (about 4 cups / 300 g)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame seeds
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides lightly with salt and pepper. Set aside.
  2. In a small bowl, whisk together soy sauce, honey, hoisin sauce, rice vinegar, minced garlic, grated ginger, and chili flakes (if using). Set aside.
  3. Heat vegetable oil in a large skillet over medium-high heat until shimmering but not smoking (about 2-3 minutes). Place chicken thighs skin-side down carefully into the pan. Press gently with tongs to ensure even contact. Cook without moving for about 6-8 minutes until skin is deep golden brown and crispy. Flip and cook the other side for 4-5 minutes.
  4. Pour the prepared glaze over the chicken in the pan. Reduce heat to medium-low and spoon the sauce over the chicken continually as it simmers. Let it cook for another 8-10 minutes, turning the chicken occasionally to coat it in the sticky sauce. If the glaze is too thin, increase heat slightly and stir gently until it reduces and thickens.
  5. While the chicken is glazing, steam the broccoli florets until bright green and just tender (about 4-5 minutes).
  6. Transfer steamed broccoli to a bowl. Drizzle with toasted sesame oil and soy sauce, then sprinkle with toasted sesame seeds. Toss gently to coat evenly.
  7. Plate the sticky chicken thighs alongside the sesame broccoli. Spoon any extra glaze from the pan over the chicken and broccoli for extra flavor.

Notes

Pat chicken skin dry before searing for crispiness. Do not overcrowd the pan to avoid steaming. Keep basting chicken with glaze for a sticky coating. Steam broccoli until just tender-crisp to maintain crunch. Toast sesame seeds before adding for extra flavor. If glaze thickens too fast or sticks, add a splash of water or chicken stock to loosen. Let chicken rest a few minutes after cooking to lock in juices.
