  • 6 oz flat rice noodles, soaked or cooked according to package instructions
  • 1 can (14 oz) full-fat coconut milk
  • 3 cups chicken or vegetable broth (low sodium preferred)
  • 2 stalks lemongrass, bruised and cut into 3-inch pieces
  • 1-inch piece galangal or fresh ginger, thinly sliced
  • 34 kaffir lime leaves, torn
  • 23 Thai bird’s eye chilies, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce
  • Juice of 12 limes
  • 1 teaspoon brown sugar
  • A handful cilantro, roughly chopped
  • 2 stalks green onions, thinly sliced (optional)

Instructions

  1. Prepare the aromatics: bruise lemongrass stalks with the back of a knife and cut into 3-inch pieces. Thinly slice galangal or ginger, mince garlic, slice bird’s eye chilies, and tear kaffir lime leaves.
  2. In a medium to large pot, combine broth, lemongrass, galangal, kaffir lime leaves, garlic, and chilies. Bring to a gentle boil, then reduce heat and simmer uncovered for 10 minutes to infuse flavors.
  3. Stir in coconut milk, fish sauce, and brown sugar. Heat gently without boiling vigorously. Taste and adjust seasoning as needed.
  4. Add peeled shrimp to the simmering soup and cook for 3-5 minutes until shrimp turn pink and opaque. Avoid overcooking.
  5. Prepare rice noodles separately according to package instructions (soak or boil for about 5-7 minutes). Drain well.
  6. Remove lemongrass stalks and lime leaves from broth using a slotted spoon or strainer. Stir in lime juice.
  7. Place noodles into bowls, ladle hot soup with shrimp over noodles, and garnish with cilantro and green onions.

Notes

Bruising lemongrass releases fragrant oils without bitterness. Avoid overcooking shrimp to keep them tender. Soak noodles until just tender to prevent mushiness. Store noodles separately from soup if refrigerating leftovers to avoid sogginess. Add fresh lime juice before serving leftovers to brighten flavors.
