  • 1/3 cup honey (or maple syrup for vegan)
  • 1/4 cup ground flaxseed
  • 1/3 cup dark chocolate chips
  • 1/2 cup Medjool dates, pitted and chopped
  • Pinch of sea salt (optional)

Instructions

  1. Prep your dates: If soft, pit and chop into small pieces (pea-sized). If dry, soak in warm water for 10 minutes, then drain and chop.
  2. Combine dry ingredients: In a large mixing bowl, add rolled oats, ground flaxseed, and a pinch of salt (if using). Stir to distribute evenly.
  3. Add wet ingredients: Add peanut butter, honey, chopped dates, and chocolate chips to the bowl.
  4. Mix everything together: Using a spatula or clean hands, mix until a cohesive dough forms (about 2-3 minutes). The mixture should be thick and slightly sticky. If too dry, add a teaspoon of water or honey; if too wet, add a tablespoon of oats.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 15-20 minutes to make rolling easier.
  6. Roll into balls: With slightly wet hands, scoop about a tablespoon of mixture and roll into balls. Place on a parchment-lined baking sheet or plate. Makes about 12-15 balls.
  7. Chill again: Refrigerate the rolled balls for at least 30 minutes to firm up.
  8. Store and enjoy: Transfer to an airtight container. Keep in the fridge for up to 2 weeks or freeze for up to 3 months.

Notes

Wet your hands slightly to prevent sticking when rolling. Chilling the dough before rolling makes it easier to handle. For a nut-free version, use sunflower seed butter. For a vegan version, swap honey for maple syrup. Toasted oats add a nutty flavor. The flavors improve after a day in the fridge.
