A quick and easy side dish featuring tender acorn squash slices caramelized in a rich maple butter glaze. Ready in just 15 minutes, it’s perfect for busy weeknights and holiday dinners alike.

  • 2 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • Pinch of black pepper (optional)
  • Fresh thyme or chopped pecans for garnish (optional)

Instructions

  1. Prep the squash: Wash the squash, cut in half from stem to root end, and scoop out seeds and stringy pulp.
  2. Slice the squash: Place each half cut-side down and slice into 1/2-inch thick crescents.
  3. Microwave to soften: Arrange slices in a single layer on a microwave-safe plate with 1 tablespoon water. Cover and microwave on high for 3-4 minutes until fork-tender.
  4. Make the maple butter glaze: In a large skillet over medium heat, melt butter. Add maple syrup, cinnamon, salt, and black pepper. Stir and let bubble for about 30 seconds.
  5. Sear the squash: Add softened squash slices to the skillet in a single layer. Cook undisturbed for 2-3 minutes until golden brown, then flip and cook another 2 minutes.
  6. Glaze and serve: Spoon remaining glaze over squash. Garnish with thyme or pecans if desired. Serve immediately.

Notes

For best results, pat squash slices dry after microwaving to ensure proper caramelization. Use medium heat to prevent maple syrup from burning. The glaze can be doubled and stored in the fridge for up to a week.
