These quick fluffy buttermilk pancakes from scratch are a happy accident turned Sunday tradition. Made with simple pantry staples, they’re tender on the inside, golden and slightly crisp on the outside, and ready in under 20 minutes.

  • 3 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk (300ml)
  • 1 large egg
  • 3 tablespoons unsalted butter, melted (42g)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your griddle or skillet over medium heat (about 350°F).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until no clumps remain.
  3. In a separate bowl or large liquid measuring cup, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. The batter will be lumpy—stop mixing when you no longer see dry flour.
  5. Let the batter rest for 2-3 minutes until tiny bubbles form on the surface.
  6. Test your pan temperature by sprinkling a few drops of water on the griddle. If they dance and evaporate quickly, it’s ready.
  7. Lightly butter the griddle using a paper towel to spread a thin, even layer.
  8. Pour about ¼ cup of batter onto the griddle for each pancake, leaving space between them.
  9. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. The bottom should be golden brown.
  10. Flip the pancakes in one confident motion and cook for another 1-2 minutes until the second side is golden brown and the pancake feels springy when pressed.
  11. Transfer to a plate and keep warm in a 200°F oven while cooking the remaining batter.

Don’t overmix the batter—lumps are your friend. Overmixing develops gluten and makes pancakes tough. Use a light hand with butter on the griddle to avoid greasy pancakes. Keep pancakes warm in a 200°F oven on a wire rack set on a baking sheet to prevent sogginess. Test your baking powder by dropping a teaspoon into hot water—if it fizzes vigorously, it’s good.
