A naturally colored, non-alcoholic Halloween punch made with butterfly pea flower tea, pineapple juice, and lemon juice. It features a stunning color-changing effect and a magical ice ring with edible flowers and pomegranate seeds.

  • 4 tablespoons butterfly pea flower tea (loose or 4 tea bags)
  • 1 cup unsweetened pineapple juice
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1/2 cup honey or agave syrup
  • 1 teaspoon fresh grated ginger
  • 1 liter ginger ale or sparkling water
  • 2 cups water or cooled butterfly pea tea (for ice ring)
  • Edible flowers (like pansies or violets)
  • 1/2 cup pomegranate seeds
  • Lemon slices (for ice ring)

Instructions

  1. Brew the Butterfly Pea Tea: In a medium saucepan, bring 4 cups of water to a boil. Remove from heat and add the butterfly pea flower tea. Let it steep for 5-7 minutes, or until the water is a deep, intense blue. Strain the tea into a large heatproof bowl or pitcher, discarding the leaves.
  2. Sweeten and Spice: While the tea is still warm, add the honey or agave syrup and the freshly grated ginger. Stir until the honey is completely dissolved. Let this mixture cool to room temperature for about 20 minutes.
  3. The Color-Changing Magic: Once the tea mixture is cool, stir in the fresh lemon juice. Watch as the deep blue liquid transforms into a vibrant purple.
  4. Assemble the Punch Base: Pour the purple tea mixture into your large pitcher or punch bowl. Add the pineapple juice and stir gently to combine. Cover and refrigerate for up to 24 hours.
  5. Create the Magical Ice Ring: Arrange the edible flowers, pomegranate seeds, and lemon slices in the bottom of a bundt pan. Carefully pour in the 2 cups of cooled butterfly pea tea (or water) until the fruit is just submerged. Freeze for about 2 hours, then add more liquid to fill the pan. Freeze completely, preferably overnight.
  6. Final Assembly: When ready to serve, remove the ice ring from the bundt pan by dipping the pan in warm water for 10-15 seconds. Gently place the ice ring into the punch bowl or pitcher.
  7. Add the Fizz: Just before serving, pour the ginger ale or sparkling water into the punch. Stir very gently to combine.
  8. Serve and Enjoy: Ladle the punch into glasses, making sure each glass gets a few pomegranate seeds or a flower from the melting ice ring. Garnish with a fresh lemon wheel or a sprig of mint.

Notes

For a more vibrant purple, use more lemon juice. For a softer lavender, use less. The ice ring can be made up to a week in advance. The punch base can be made up to 3 days ahead. Add the carbonated beverage just before serving to keep it fizzy.
