  • 1 cup (240 g) whole milk ricotta cheese
  • 68 fresh figs, washed and quartered or thinly sliced
  • 2 tablespoons (30 ml) honey
  • Pinch of chili flakes or cayenne pepper (for hot honey)
  • 1 tablespoon (15 ml) extra virgin olive oil
  • Zest of half a lemon
  • Pinch of fine sea salt
  • Baguette or rustic bread, sliced 1/2-inch thick
  • Optional garnishes: fresh thyme leaves or cracked black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice the baguette into 1/2-inch (1.3 cm) slices and arrange them in a single layer on the baking sheet.
  3. Bake the bread slices for 8-10 minutes until golden brown and crisp around the edges. Watch closely after 7 minutes to prevent burning. Remove and let cool slightly.
  4. In a medium bowl, combine ricotta, olive oil, lemon zest, and sea salt.
  5. Whip the ricotta mixture using an electric mixer or whisk vigorously by hand for 2-3 minutes until light, airy, and spreadable.
  6. Slice the figs into quarters or thin slices depending on preference.
  7. Spread a generous dollop of whipped ricotta on each toasted bread slice.
  8. Warm honey gently if thick, stir in chili flakes to make hot honey if desired, then drizzle over the crostini.
  9. Optionally, sprinkle fresh thyme leaves or cracked black pepper on top.
  10. Serve immediately while crostini are crisp and ricotta is cool and creamy.

Notes

Watch the bread closely while toasting to avoid burning. Use cold ricotta for best whipping results. Warm honey gently to preserve enzymes and flavor. For dairy-free, substitute ricotta with whipped cashew cream or coconut yogurt and honey with agave or maple syrup infused with chili.
