  • 1 ¾ cups (350g) granulated sugar
  • 1 cup (226g) unsalted butter, softened
  • 4 large eggs, room temperature
  • 1 cup (240ml) whole milk
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • ½ cup (90g) rainbow jimmies sprinkles
  • 1 cup (226g) unsalted butter, softened (for buttercream)
  • ½ cup (100g) shortening (for buttercream)
  • 4 cups (480g) powdered sugar, sifted (for buttercream)
  • 2 teaspoons vanilla extract (for buttercream)
  • 34 tablespoons heavy cream (for buttercream)
  • ¼ teaspoon salt (for buttercream)

Instructions

  1. Preheat oven to 350°F (175°C). Line a half-sheet pan (13×18 inches) with parchment paper, letting edges hang over. Lightly grease parchment.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Stir in rainbow jimmies sprinkles until coated.
  3. In a large bowl, beat softened butter and sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each. Add vanilla extract and beat until combined.
  5. Reduce mixer speed to low. Add flour mixture in three additions, alternating with milk in two additions, starting and ending with flour. Mix just until combined; fold by hand with a rubber spatula until smooth.
  6. Pour batter into prepared pan and spread evenly. Tap pan gently on counter to release air bubbles.
  7. Bake for 20-25 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Cool in pan on wire rack for 10 minutes, then lift out using parchment handles and cool completely on rack.
  8. For buttercream: Beat softened butter and shortening on medium speed until smooth, about 2 minutes. Gradually add sifted powdered sugar, one cup at a time, beating on low. Add vanilla, salt, and 3 tablespoons heavy cream. Beat on medium-high for 3-4 minutes until light and fluffy. Adjust consistency with additional cream or powdered sugar as needed.
  9. Once cake is completely cool, spread buttercream evenly over top using an offset spatula. Top with extra sprinkles if desired.

Notes

Use jimmies sprinkles (not nonpareils) to prevent color bleeding. Toss sprinkles in flour before adding to batter to keep them from sinking. Ensure all ingredients are at room temperature for best texture. Do not overmix batter. Cool cake completely before frosting. For cleaner slices, refrigerate cake for 30 minutes before cutting.
