This easy 5-ingredient brown sugar glazed meatloaf is tender, juicy, and topped with a sweet-and-tangy caramelized crust. Perfect for busy weeknights, it comes together in minutes with minimal mess and is a crowd-pleaser every time.

  • 2 lbs (900 g) ground beef (80/20 blend)
  • 1 cup (240 ml) ketchup, divided
  • ½ cup (100 g) brown sugar, packed
  • 2 large eggs
  • 1 sleeve (about 40 crackers / 150 g) saltine crackers, crushed into fine crumbs
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)
  • ½ teaspoon black pepper (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch (23×13 cm) loaf pan with parchment paper, leaving some overhang on the long sides. If you don’t have parchment, spray the pan well with non-stick cooking spray.
  2. Crush the saltine crackers in a zip-top bag with a rolling pin or the bottom of a glass until you have fine crumbs (about 1 cup).
  3. In a mixing bowl, combine the ground beef, crushed crackers, eggs, ½ cup of the ketchup, and the optional garlic powder, onion powder, and pepper if using. Use your hands to mix everything together until just combined—do not overmix.
  4. Transfer the meat mixture to the prepared loaf pan. Press it in gently, smoothing the top with your hands or a spatula.
  5. In a small bowl, whisk together the remaining ½ cup of ketchup and the packed brown sugar until smooth.
  6. Pour the glaze over the top of the meatloaf and spread it evenly with the back of a spoon.
  7. Place the loaf pan on a baking sheet to catch any drips. Bake for 55-65 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.
  8. Let the meatloaf rest in the pan for 10 minutes before slicing. Use the parchment overhang to lift it out of the pan, then slice and serve.

Notes

For a gluten-free version, use gluten-free crackers or rolled oats instead of saltines. To prevent the glaze from burning, tent the loaf pan loosely with aluminum foil around the 40-minute mark if the top gets too dark. Let the meatloaf rest for 10 minutes before slicing to allow juices to redistribute.
