Instructions

  1. Brown the butter: Place 1 cup unsalted butter in a light-colored skillet over medium heat. Melt completely, swirling occasionally. Pour into a heatproof bowl (including brown bits) and cool for 10-15 minutes.

  3. Mix dry ingredients: In a medium bowl, whisk together 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, ½ teaspoon baking powder, 1 ½ teaspoons ground cinnamon, ½ teaspoon ground nutmeg, and ½ teaspoon salt. Set aside.
  4. Combine wet ingredients: In a large bowl, whisk together cooled brown butter, ¾ cup granulated sugar, and ¾ cup packed light brown sugar until it looks like wet sand. Add room temperature egg and 1 teaspoon vanilla extract, whisk until smooth and glossy.
  5. Add reduced cider: Pour cooled cider syrup into wet mixture and whisk until fully combined.
  6. Combine wet and dry: Add dry ingredients to wet mixture in two additions, folding gently with a rubber spatula until just combined (a few streaks of flour are okay). Dough will be soft and slightly sticky.
  7. Chill dough (optional but recommended): Cover bowl with plastic wrap and refrigerate for at least 30 minutes.
