  • ½ cup beer (amber ale or lager)
  • 1 teaspoon Dijon mustard

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water, brown sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining 2 cups of flour, one cup at a time, stirring until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Add flour or water as needed.
  4. Let it rise: Place dough in a lightly oiled bowl, cover with a towel, and let rise in a warm spot for 45 minutes to 1 hour until doubled in size.
  5. Preheat and prep: About 15 minutes before dough is done rising, preheat oven to 425°F. Line a baking sheet with parchment paper or a silicone mat.
  6. Make the baking soda bath: In a large pot, bring 10 cups of water to a boil. Carefully add ½ cup baking soda (it will bubble up). Reduce heat to a gentle simmer.
  7. Shape the pretzel bites: Punch down dough and divide into four equal pieces. Roll each piece into a 1-inch thick rope, then cut into 1-inch pieces (about 20-24 per rope).
  8. Bathe the pretzel bites: Working in batches of 6-8, drop pieces into simmering baking soda bath for 30 seconds, flip, and let sit another 30 seconds. Remove with slotted spoon and place on prepared baking sheet.
  9. Brush and salt: Whisk egg with 1 tablespoon water. Brush each pretzel bite with egg wash and sprinkle generously with coarse salt.

  11. Make the beer cheese dip: In a small saucepan over medium-low heat, combine cream cheese and beer. Stir until smooth. Add shredded cheddar, Dijon mustard, garlic powder, and cayenne (if using). Stir until melted and smooth. Keep warm.
