  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (227g), softened
  • 1 ¾ cups granulated sugar (350g)
  • 4 large eggs, room temperature
  • 1 cup whole milk (240ml), room temperature
  • 2 tsp pure vanilla extract
  • Red and blue gel food coloring
  • 2 cups heavy whipping cream (480ml), cold
  • ¾ cup powdered sugar (90g), sifted
  • 1 tsp vanilla extract
  • Fresh blueberries (for decoration)
  • Strawberries or raspberries, sliced (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. Using a mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. With the mixer on low, add the dry ingredients in three additions, alternating with two additions of milk, starting and ending with the flour mixture. Mix just until combined.
  6. Divide the batter evenly into three bowls. Color one portion red and another blue with gel food coloring, leaving the last portion plain.
  7. Pour the batter into the pan in stripes: start with a thick layer of white, then spoon red, then white, then blue, alternating until all batter is used.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the cake springs back lightly when touched.
  9. Cool the cake in the pan on a wire rack for at least 30 minutes before frosting.
  10. In a chilled bowl, beat the cold heavy cream on high speed until it starts to thicken. Gradually add powdered sugar and vanilla, whipping until stiff peaks form.
  11. Spread the whipped frosting evenly over the cooled cake with an offset spatula.
  12. Arrange fresh blueberries in the top-left corner to mimic the stars, and lay out sliced strawberries in rows for the red stripes.
  13. Refrigerate the cake for at least 1 hour before slicing to let the frosting set and flavors meld.

Keep heavy cream and mixing bowl chilled before whipping to achieve perfect fluffy frosting. Use gel food coloring sparingly to avoid deflating the batter. Refrigerate cake after frosting to set. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use coconut cream but expect denser texture.
