  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (135 g) grated zucchini, squeezed dry
  • 1 cup (175 g) semi-sweet chocolate chips
  • For the Brown Butter Glaze:
  • 1/4 cup (57 g) unsalted butter
  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. Grate 1 1/2 cups of zucchini and squeeze out as much moisture as possible using a clean kitchen towel.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a separate bowl, beat softened butter with granulated and brown sugars until light and fluffy, about 3-4 minutes.
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. Gradually fold dry ingredients into the wet mixture using a rubber spatula, stopping as soon as flour disappears.
  7. Gently fold in the squeezed zucchini and chocolate chips.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  10. Cool bread in the pan for 15 minutes, then transfer to a wire rack to cool completely before glazing.
  11. To make the glaze, melt butter in a small saucepan over medium heat until golden brown and nutty, about 4-5 minutes. Remove from heat.
  12. Whisk browned butter with powdered sugar, milk, vanilla, and salt until smooth. Adjust milk for desired consistency.
  13. Drizzle glaze over cooled bread and let set for 10-15 minutes before slicing.

Notes

Wring out zucchini thoroughly to prevent soggy bread. Do not glaze while bread is warm to avoid runny glaze. Use a serrated knife for slicing to maintain crumb integrity. Adjust milk in glaze for desired thickness. Tent bread with foil if browning too fast.
