  • 3 medium ripe bananas, mashed (about 1 cup / 240ml)
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (130g) chocolate chips (semi-sweet or dark)
  • Optional: ½ cup (60g) chopped walnuts or pecans
  • Optional: ¼ cup (60g) Greek yogurt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan with butter or non-stick spray and line it with parchment paper for easier removal.
  2. In a medium bowl, mash the ripe bananas with a fork until mostly smooth but still a bit chunky.
  3. In a large bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Set aside.
  4. Add melted butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  5. Pour the dry ingredients into the banana mixture. Gently fold with a spatula until just combined; do not overmix.
  6. Fold in the chocolate chips evenly. If using nuts, fold them in now as well.
  7. Scrape the batter into the prepared loaf pan and smooth the top gently.
  8. Bake for 55-65 minutes, starting to check at 55 minutes by inserting a toothpick in the center. It should come out with a few moist crumbs but no wet batter.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Use very ripe bananas with brown spots for best sweetness and moisture. Do not overmix the batter to keep the bread tender. Melt butter and let it cool slightly before mixing to avoid cooking the eggs. Gently fold in chocolate chips to prevent clumping. Test doneness with a toothpick; it should come out with moist crumbs but no wet batter. If the bread browns too quickly, tent with foil during baking.
