  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon (8g) cornstarch
  • 1 cup (90g) rolled oats (old-fashioned)
  • ½ cup (60g) whole wheat flour
  • ¼ cup (50g) solid coconut oil
  • 2 tablespoons (28g) cold unsalted butter, cubed
  • ¼ cup (50g) packed brown sugar
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch baking dish with coconut oil or butter.
  2. Make the miso caramel filling: In a large bowl, whisk together maple syrup, white miso paste, lemon juice, vanilla extract, cinnamon, and cornstarch until smooth. Add sliced apples and toss gently to coat. Let sit for a few minutes.
  3. Make the crumble topping: In a medium bowl, combine rolled oats, whole wheat flour, brown sugar, and salt. Add solid coconut oil and cold cubed butter. Use a pastry cutter, fork, or fingertips to cut fats into dry ingredients until mixture resembles coarse meal with some pea-sized butter chunks.
  4. Assemble the crumble: Pour apple mixture into prepared baking dish and spread evenly. Sprinkle crumble topping evenly over apples without packing down.
  5. Place dish on a baking sheet. Bake for 35-40 minutes, until filling is bubbly and topping is golden brown. If topping browns too quickly, tent with foil after 25 minutes.
  6. Cool on a wire rack for at least 15-20 minutes before serving to allow caramel to thicken.
