  • Zest from 2 medium lemons
  • ¼ cup freshly squeezed lemon juice

  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Optional fresh mint leaves for garnish

Instructions

  1. Cube the angel food cake into roughly 1-inch cubes. Set aside about 2 cups (250g) of these cubes for layering.
  2. In a chilled large mixing bowl, pour 1 cup of heavy cream. Add 3 tablespoons powdered sugar, 1 teaspoon vanilla extract, and the zest from 2 lemons.
  3. Using an electric mixer, whip the cream mixture on medium-high speed until soft peaks form, about 3-5 minutes. Avoid overwhipping.
  4. Gently fold in ¼ cup of fresh lemon juice into the whipped cream.
  5. In a clear glass trifle bowl or individual serving glasses, layer one-third of the angel food cake cubes, followed by a generous spoonful of lemon whipped cream, then a handful of fresh blueberries.
  6. Repeat the layering two more times, finishing with blueberries on top.
  7. Cover the trifle with plastic wrap and refrigerate for at least 2 hours to let flavors meld and cake soak slightly without becoming soggy.
  8. Just before serving, garnish with fresh mint leaves if desired. Serve chilled.

If angel food cake feels dry, sprinkle 1-2 teaspoons lemon juice over cubes before layering to add moisture without sogginess. Use a serrated knife to cube cake gently. Chill bowl and beaters for best whipped cream volume. Do not overwhip cream to avoid grainy texture. Let trifle chill at least 2 hours before serving for best flavor and texture. Frozen blueberries can be used if thawed and drained well.
