  • 1/2 cup (120 g) low-fat cottage cheese
  • 1/4 cup (30 g) grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/2 cup (75 g) diced bell peppers (any color)
  • 1/4 cup (40 g) finely chopped red onion
  • 1 cup (30 g) fresh spinach, roughly chopped
  • 2 tablespoons (8 g) chopped fresh chives or parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 12-cup muffin tin with non-stick cooking spray or butter.
  2. In your blender or food processor, combine the cottage cheese, grated Parmesan, salt, pepper, and garlic powder. Blend until the mixture is completely smooth and creamy, about 30-45 seconds. Set aside.
  3. In a large, clean mixing bowl, pour in the egg whites. Using a hand mixer or stand mixer with the whisk attachment, beat the egg whites on medium-high speed until stiff peaks form, about 3-4 minutes.
  4. Gently pour the blended cottage cheese mixture over the whipped egg whites. Add the diced bell peppers, chopped red onion, and spinach. Using a rubber spatula, gently fold the mixture together until just combined. Be careful not to stir.
  5. Divide the batter evenly among the 12 prepared muffin cups using a 1/4 cup measure.
  6. Bake for 15-18 minutes, until the tops are golden brown and spring back lightly when touched. A toothpick inserted into the center should come out clean.
  7. Let the muffins cool in the tin for 5 minutes. Then, run a knife around the edges and gently lift them out. Transfer to a wire rack to cool completely.
