  • Sea salt flakes (to taste)
  • 1 teaspoon lemon zest (optional)
  • Cracked black pepper (optional)
  • Bread or crackers for serving (rustic baguette slices, crackers, or warm buttermilk biscuits)

Instructions

  1. Soften the butter by leaving it out at room temperature for about 30 minutes until soft but not melted.
  2. Rinse and pat dry fresh herbs. Finely chop thyme, chives, parsley, and rosemary. Mince the garlic clove finely or use a garlic press.
  3. Place the softened butter in a mixing bowl. Using an electric hand mixer or stand mixer on medium speed, whip the butter for 3-4 minutes until light, fluffy, and spreadable.
  4. Add the chopped herbs, minced garlic, lemon zest (if using), a pinch of sea salt flakes, and cracked black pepper to the whipped butter. Fold gently with a spatula until evenly combined and airy.
  5. Spread the whipped herb butter evenly over a wooden board or serving platter, creating a rustic textured look by swirling with the back of a spoon or spatula.
  6. Drizzle 2-3 tablespoons of runny honey generously over the butter. Sprinkle extra flaky sea salt and garnish with a few herb leaves or edible flowers.
  7. Arrange slices of bread, crackers, or biscuits around the board and serve immediately.

Notes

Use fresh herbs for best flavor. Avoid over-whipping butter to prevent separation. Drizzle honey just before serving to keep it glossy. Butter board can be prepared up to 24 hours ahead and refrigerated; bring to room temperature before serving. For dairy-free, use plant-based butter and substitute honey with maple syrup or agave nectar.
