Honey Bourbon Grilled Peach Salad with Burrata and Candied Pecans

A quick and easy summer salad featuring grilled peaches glazed with honey bourbon, creamy burrata cheese, peppery arugula, and crunchy candied pecans. This salad balances sweet, smoky, creamy, and crunchy flavors for a unique and refreshing dish.

Ingredients

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons bourbon (optional but recommended)
  • 3 tablespoons honey, preferably raw or local
  • 1 tablespoon olive oil, for brushing peaches
  • 4 cups fresh arugula
  • 8 ounces burrata cheese, room temperature
  • 1 cup pecans, roughly chopped
  • 2 tablespoons brown sugar
  • 1 tablespoon butter, melted
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Prepare the honey bourbon glaze by whisking together honey, bourbon, and olive oil in a small bowl until smooth. Set aside.
  2. Rinse and halve the peaches, removing pits. Brush each half generously with the honey bourbon glaze.
  3. Preheat grill or grill pan to medium-high heat. Place peaches cut side down and grill for 3-4 minutes until grill marks appear and peaches soften slightly but still hold shape. Flip and grill for 2 more minutes. Remove and let cool slightly.
  4. Candy the pecans by melting butter in a skillet over medium heat. Add chopped pecans and brown sugar. Stir frequently for 4-5 minutes until pecans are toasted and coated with shiny sugar. Transfer to parchment paper to cool.
  5. On a large platter, spread fresh arugula. Slice grilled peaches into wedges and arrange on top.
  6. Tear burrata over the salad in chunks.
  7. Scatter candied pecans over the salad. Drizzle with fresh lemon juice and season with salt and pepper to taste. Optionally drizzle extra honey bourbon glaze for more sweetness.
  8. Serve immediately, best enjoyed warm or at room temperature.

Notes

Use firm but juicy peaches for best grilling results. Burrata should be at room temperature for maximum creaminess. Candy pecans ahead of time to save time. If no grill is available, roast peaches in a 425°F oven for 10-12 minutes, turning halfway. For vegan option, replace burrata with avocado or vegan cream cheese and use maple syrup instead of honey.
