  • 1 scoop vanilla or unflavored protein powder (about 30g)
  • 1/2 cup almond flour
  • 1 cup rolled oats (blended into flour) or 1 cup oat flour
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1/4 cup milk of choice (dairy, almond, oat, or soy)
  • 2 tablespoons coconut oil or butter, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with liners or spray with non-stick cooking spray.
  2. If using rolled oats, add them to a blender or food processor and pulse until they form a fine flour (about 30-45 seconds).
  3. In a large mixing bowl, whisk together the oat flour, almond flour, protein powder, pumpkin pie spice, baking soda, and salt.
  4. In a separate medium bowl, whisk together the pumpkin puree, eggs, maple syrup, milk, and melted coconut oil (or butter) until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  6. Gently fold in the dark chocolate chips until evenly distributed. Reserve a small handful for topping if desired.
  7. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
