Instructions

  1. Preheat your oven to 400°F (200°C). Place a 10-inch cast iron skillet inside the oven while it preheats. Let the skillet heat for at least 10 minutes after the oven reaches temperature.
  2. In a large mixing bowl, whisk together 1 cup yellow cornmeal, 1 cup all-purpose flour, 1/3 cup granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
  3. In a separate medium bowl, whisk together 1 cup buttermilk, 1/3 cup whole milk, 2 large eggs (room temperature), and 1/4 cup honey until smooth and slightly frothy.
  4. Melt 4 tablespoons of unsalted butter and let it cool slightly. Pour the melted butter into the wet mixture and whisk to combine.
  5. Pour the wet ingredients into the dry ingredients. Stir gently with a rubber spatula until just combined. A few lumps are fine—do not overmix.
  6. Carefully remove the hot skillet from the oven using oven mitts. Add the remaining 2 tablespoons of butter to the skillet and swirl until melted and sizzling.

  10. As soon as the cornbread comes out of the oven, pour the warm honey butter glaze over the top. Use a pastry brush to spread it evenly. Let it rest for 5 minutes before serving.
