These fudgy dark chocolate brownies are irresistibly rich and moist, topped with flaky sea salt for a perfect balance of sweet and salty. Quick and easy to make, they are perfect for any occasion.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, melted
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ¾ cup (65g) unsweetened cocoa powder, sifted
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon salt
  • Flaky sea salt for topping
  • Optional: ½ cup (90g) dark chocolate chunks or chips
  • Optional: 1 teaspoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Melt the butter in a microwave-safe bowl or on the stove over low heat until fully melted but not browned (about 2-3 minutes in microwave, stirring halfway).
  3. Whisk together the melted butter and sugar in a large mixing bowl until combined and glossy.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract until the batter is smooth and shiny.
  5. Sift the cocoa powder, flour, and salt together into a separate bowl.
  6. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Fold gently and stop once no flour streaks remain to avoid cakey brownies.
  7. Optional: Fold in dark chocolate chunks or chips and espresso powder if using.
  8. Pour the batter into the prepared pan and spread evenly with a spatula or spoon.
  9. Sprinkle flaky sea salt evenly over the top.
  10. Bake for 25-30 minutes, rotating the pan halfway through. The edges should look set and start to pull away, but the center should remain shiny and slightly soft.
  11. Cool completely on a wire rack before lifting the brownies out using the parchment overhang.
  12. Cut into 16 squares with a sharp knife, wiping it clean between cuts for neat slices.

Notes

Use unsalted butter to control salt levels. Do not overmix the batter to keep brownies fudgy, not cakey. Use flaky sea salt on top for texture and flavor contrast. Baking times may vary depending on oven; check brownies early. For gluten-free, substitute all-purpose flour with almond flour. For dairy-free, substitute butter with coconut oil and use dairy-free chocolate. Whisk butter and sugar vigorously at the start for a crackly top.
