  • 3 to 4 large heirloom tomatoes (about 1.5 pounds / 700 grams), sliced into 1/4-inch thick rounds
  • 8 ounces (225 grams) burrata cheese, brought to room temperature
  • Fresh basil leaves, torn by hand
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon aged balsamic vinegar
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 minced garlic clove
  • Optional: Crusty bread for serving

Instructions

  1. Rinse and gently pat dry the tomatoes. Slice heirloom tomatoes into 1/4-inch thick rounds or halve cherry tomatoes.
  2. Remove burrata from the fridge about 20 minutes before assembling to bring it to room temperature.
  3. On a large serving platter, alternate tomato slices and torn basil leaves.
  4. Tear the burrata into chunks and scatter over the tomatoes.
  5. In a small bowl, whisk together extra virgin olive oil, aged balsamic vinegar, sea salt, black pepper, and optional minced garlic.
  6. Drizzle the dressing evenly over the salad.
  7. Finish with an extra sprinkle of sea salt and freshly cracked black pepper. Garnish with whole basil leaves if desired.
  8. Serve immediately, optionally with crusty bread.

Let burrata come to room temperature before serving for best texture and flavor. Use ripe heirloom tomatoes for optimal sweetness and juiciness. Tear basil by hand to avoid bruising.
