A quick and refreshing summer snack featuring juicy watermelon, sweet strawberries, and creamy feta cheese, all brought together with a honey mint drizzle. Perfect for busy days, picnics, or casual entertaining.

Ingredients

  • Fresh watermelon, cut into 1-inch cubes (ripe, seedless)
  • Fresh strawberries, hulled and halved if large
  • Feta cheese, crumbled (small-curd feta recommended)
  • Fresh mint leaves, whole for threading or finely chopped for drizzle
  • Wooden or bamboo skewers (6-inch length)
  • Pure honey (about 3 tablespoons)
  • Fresh lemon juice (about 1 tablespoon)
  • Fresh mint leaves, finely chopped (about 2 tablespoons)

Instructions

  1. Rinse strawberries gently under cold water, hull them by removing leafy tops, and halve any large berries.
  2. Cut watermelon into 1-inch cubes, removing seeds and rind, aiming for roughly equal amounts of each fruit.
  3. Crumble feta cheese into small, bite-sized pieces. Chill for 10 minutes beforehand if feta is too crumbly.
  4. In a small bowl, whisk together honey, fresh lemon juice, and finely chopped fresh mint leaves. Adjust honey or lemon to taste.
  5. Thread skewers starting with a piece of watermelon, then a strawberry half, followed by a small chunk of feta, and finish with a fresh mint leaf or two. Repeat until skewer is full but not overcrowded.
  6. Arrange skewers on a serving platter.
  7. Just before serving, drizzle the honey mint mixture evenly over the skewers or serve the drizzle on the side for dipping.
  8. Serve immediately to keep fruit juicy and feta creamy. If preparing ahead, keep skewers chilled and drizzle just before serving.

Notes

Use ripe but firm fruit to avoid mushiness. Keep feta chilled until assembly to maintain shape. Add honey mint drizzle just before serving to prevent sogginess. For dairy-free, substitute feta with marinated tofu cubes. Fresh mint is preferred; basil can be used as a substitute. Frozen fruit is not recommended.
