A refreshing and easy-to-make agua fresca combining fresh strawberries, cucumber, mint, honey, and lime juice for a cool, crisp summer drink.

  • 1 pound (450 grams) fresh strawberries, hulled and quartered
  • 1 medium cucumber, peeled and chopped
  • 1/4 cup packed fresh mint leaves, roughly chopped
  • 3 tablespoons honey (raw or wildflower)
  • Juice of 2 medium limes
  • 4 cups (950 ml) cold filtered water
  • Ice cubes (optional, for serving)

Instructions

  1. Rinse the strawberries and cucumber well. Hull and quarter the strawberries, peel and chop the cucumber into chunks. Roughly chop the mint leaves.
  2. In a blender, combine the strawberries, cucumber, mint, honey, and lime juice. Add 4 cups (950 ml) of cold water. Blend on high for about 1–2 minutes until smooth and vibrant.
  3. Pour the blended liquid through a fine mesh strainer or nut milk bag into a large pitcher. Use a spoon or spatula to gently press the pulp and extract as much liquid as possible. Discard the solids or save for smoothies.
  4. Taste the agua fresca. If it’s too tart, stir in more honey, a teaspoon at a time. Refrigerate for at least 30 minutes to let the flavors marry and chill thoroughly.
  5. Serve poured over ice cubes in glasses. Garnish with a sprig of mint or a thin cucumber slice if desired.

Notes

Use ripe strawberries for best flavor. Peel cucumber to avoid bitterness. Blend honey with a splash of warm water first for better mixing. Straining is optional but recommended for smooth texture. Chill for at least 30 minutes before serving. Can substitute honey with maple syrup or agave for vegan version. For a fizzy variation, replace half the water with sparkling water.
