  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries (optional)
  • 2 cups heavy whipping cream, chilled
  • 1/2 cup powdered sugar, sifted
  • 1 tablespoon pure vanilla bean paste or extract
  • 4 ounces cream cheese, softened

Instructions

  1. Prepare the Cake Soak: In a small bowl, mix the whole milk and vanilla extract. Set aside.
  2. Cut the Cake: Cube the pound cake or angel food cake into roughly 1-inch pieces. Place in a medium bowl and drizzle the vanilla milk mixture evenly over the cubes. Toss gently to coat, then let sit for 10 minutes.
  3. Wash and Prepare the Berries: Rinse strawberries, blueberries, and raspberries gently under cold water. Hull and slice strawberries. Drain on paper towels.
  4. Make the Vanilla Cream: In a chilled large mixing bowl, beat softened cream cheese with powdered sugar and vanilla bean paste until smooth. Slowly add heavy whipping cream and whip on medium-high speed until soft peaks form.
  5. Layer the Trifle: Start with a layer of soaked cake cubes at the bottom of the trifle bowl (about 1/3 of the cake). Add a layer of vanilla cream, then a layer of mixed berries. Repeat layers two more times, finishing with vanilla cream on top.
  6. Chill and Set: Cover the trifle bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
  7. Optional Garnish: Just before serving, scatter extra berries and dust with powdered sugar.
