Ingredients

  • Baguette or Italian bread, sliced about ½ inch thick
  • Fresh strawberries, hulled and diced
  • Fresh blueberries, whole, washed and dried
  • Fresh basil leaves, chiffonade or roughly chopped
  • Garlic clove, peeled and halved
  • Extra virgin olive oil, for drizzling (about 2 tablespoons / 30 ml)
  • Balsamic vinegar, a splash (about 1 tablespoon / 15 ml)
  • Salt and freshly cracked black pepper, to taste
  • Optional: Creamy ricotta or mascarpone cheese (about 1 teaspoon per slice)

Instructions

  1. Preheat your oven to 375°F or heat a grill pan over medium heat (about 5 minutes).
  2. Slice the baguette into ½-inch thick slices, yielding about 12 to 15 slices.
  3. Arrange the bread slices on a baking sheet or grill pan and toast for 5-7 minutes until golden and crisp, watching closely to avoid burning.
  4. While the bread is warm, rub each slice gently with the cut side of a garlic clove to impart subtle garlic aroma.
  5. In a mixing bowl, combine diced strawberries, whole blueberries, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Toss gently to combine.
  6. If using cheese, spread about 1 teaspoon of ricotta or mascarpone on each toast slice before adding the berry mixture.
  7. Spoon the berry mixture generously over each slice and arrange on a serving platter.
  8. Drizzle a little more olive oil over the top and garnish with extra basil leaves if desired.
  9. Serve immediately or keep chilled and assemble within 30 minutes to maintain bread crispness.

Toast bread until crisp but not burnt to avoid sogginess. Rub garlic on warm bread for subtle flavor. Toss berries gently to keep blueberries whole.
