  • 2 tbsp fresh dill, finely chopped
  • 2 tbsp fresh flat-leaf parsley, chopped
  • 1 tbsp fresh mint leaves, chopped (optional)
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra-virgin olive oil
  • Salt to taste (preferably flaky sea salt)
  • Freshly ground black pepper to taste
  • 1 tsp red wine vinegar (optional)
  • Feta cheese crumbles (optional)

Instructions

  1. Prepare the vegetables: Peel and slice 2 medium cucumbers thinly. Halve and chop 3 ripe tomatoes into bite-sized pieces. Thinly slice half a small red onion; soak in cold water for 10 minutes if a milder flavor is desired, then drain well.
  2. Chop the fresh herbs: Finely chop 2 tablespoons each of fresh dill and flat-leaf parsley. If using, chop 1 tablespoon of fresh mint leaves.
  3. Make the dressing: In a small bowl, whisk together 3 tablespoons extra-virgin olive oil and 2 tablespoons freshly squeezed lemon juice. Add salt and freshly ground black pepper to taste. Whisk in 1 teaspoon red wine vinegar if using.
  4. Toss the salad: In a medium mixing bowl, combine cucumbers, tomatoes, red onion, and herbs. Pour the dressing over the salad and toss gently but thoroughly to coat all pieces evenly. Use salad tongs or two large spoons to avoid bruising the veggies.
  5. Add final touches: Sprinkle crumbled feta cheese over the top if desired and give the salad a gentle final toss.
  6. Rest before serving: Let the salad rest for 10-15 minutes at room temperature to allow flavors to meld and soften the onion’s bite.
