Fresh Creamy Cucumber Salad Recipe with Sour Cream Dill and Red Onion

A cold, crisp, and creamy cucumber salad with sour cream, fresh dill, and red onion, perfect for summer and easy to prepare in under 15 minutes.

  • 2 medium English or Persian cucumbers, thinly sliced (about 500 grams / 1.1 lbs)
  • 1 small red onion, thinly sliced and soaked in cold water for 10 minutes
  • ½ cup (120 ml) sour cream, full-fat preferred
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon kosher or sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Wash and thinly slice 2 medium English cucumbers about 1/8 inch (3 mm) thick. Peel halfway if cucumbers have thick skin.
  2. Thinly slice 1 small red onion and soak in cold water for 10 minutes to mellow sharpness. Drain and pat dry.
  3. In a small bowl or jar, combine ½ cup sour cream, 1 tablespoon white vinegar, 1 teaspoon granulated sugar, ½ teaspoon salt, and freshly ground black pepper to taste. Whisk or shake until smooth and creamy.
  4. Finely chop 2 tablespoons fresh dill and stir into the dressing.
  5. In a large bowl, combine sliced cucumbers and drained onions. Pour dressing over and gently toss to coat evenly without bruising cucumbers.
  6. Cover and refrigerate for at least 30 minutes to let flavors meld.
  7. Before serving, taste and adjust salt, pepper, or dill as needed.

Notes

Soak red onions in cold water for 10 minutes to mellow sharpness. Salt cucumbers and let them rest in a colander for 10 minutes to reduce excess moisture and prevent watery salad. Prepare salad at least 30 minutes before serving for best flavor. Keep dressing separate if preparing ahead to avoid soggy cucumbers.
