  • 1 cup (150 g) corn kernels, fresh or frozen (thawed)
  • 1 cup (150 g) grape or cherry tomatoes, halved
  • 1/2 cup (75 g) finely diced red bell pepper
  • 1/2 cup (75 g) finely diced green bell pepper
  • 1/4 cup (40 g) finely chopped red onion
  • 1/4 cup (10 g) fresh cilantro, chopped (optional)
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons (30 ml) fresh lime juice (about 1 lime)
  • 2 tablespoons (30 ml) olive oil (extra virgin)
  • 1 tablespoon (15 ml) apple cider vinegar or white wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon (5 ml) honey or agave syrup
  • Salt and black pepper to taste
  • Water, as needed to thin the dressing

Instructions

  1. Rinse and drain the black beans thoroughly to reduce any canned flavor. Thaw frozen corn completely and pat dry. Dice red and green bell peppers into 1/4-inch pieces. Halve cherry tomatoes and finely chop red onion and cilantro. (10-12 minutes)
  2. In a blender or food processor, combine avocado, fresh lime juice, olive oil, vinegar, minced garlic, and honey. Blend until smooth, adding water 1 tablespoon at a time to reach pourable consistency. Season with salt and black pepper. (5 minutes)
  3. In a large mixing bowl, gently fold together black beans, corn, diced peppers, tomatoes, onion, and cilantro. Pour the creamy avocado lime vinaigrette over the salad and toss lightly to coat evenly without mashing the avocado. (2-3 minutes)
  4. Chill the cowboy caviar in the fridge for at least 30 minutes before serving to let flavors meld. Stir before serving and adjust salt or lime juice if needed.
