  • 1 cup corn kernels, fresh or frozen (thawed)
  • 1 cup red bell pepper, diced
  • 1 cup green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh lime juice (about 2 limes)
  • 3 tablespoons olive oil
  • 1 tablespoon honey or agave
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Drain and rinse the canned black beans thoroughly in a colander to remove excess starch and sodium (about 1 minute). If using frozen corn, thaw completely and drain any water.
  2. Dice the red and green bell peppers into roughly ½-inch pieces (about 10 minutes). Halve the cherry tomatoes and finely chop the red onion. Soak the onion in cold water for 10 minutes if you want to reduce sharpness, then drain well.
  3. Remove seeds from the jalapeño for milder heat, then mince finely. Chop the fresh cilantro leaves loosely.
  4. In a small bowl, whisk together fresh lime juice, olive oil, honey or agave, ground cumin, and a pinch of salt and pepper until emulsified (about 2 minutes). Adjust sweetness or acidity by tasting.
  5. In a large mixing bowl, combine black beans, corn, chopped peppers, tomatoes, onion, jalapeño, and cilantro. Pour the dressing over and toss gently but thoroughly to coat all ingredients evenly.
  6. Cover the bowl with plastic wrap or transfer to an airtight container, then refrigerate for at least 30 minutes to allow flavors to meld.
  7. Give the salad a gentle stir before serving. Taste and adjust salt or lime juice if needed. Serve chilled or at room temperature.
